Many (West Flemish) food companies are SMEs but also larger food companies with very limited possibilities to do product and process innovation in a (scientifically) substantiated way. In most cases, the available R&D capacity, labo capacity and pilot infrastructure are very small or totally absent. Nevertheless, these companies are struggling with many questions about the possibilities and the pros and cons of various alternative raw materials and how to process them in their products. In order to be able to provide an answer to the challenges, it is important that infrastructure thresholds are removed, through an integrated range of equipment (both pilot and analytical) to achieve a shift in raw materials and processes in a controlled manner. Only in this way can SMEs also market alternative, sustainable and nutritious food products faster and thus retain or even strengthen their competitive market position.
